Rice with artichokes

 Ingredients (for 4 persons)
- Riso fino Ribe Divella   
- Butter   60 g
- Meat Broth   2 lt
- Artichoke   3
- Eggs   3
- Onion   half
- Salt   as much as
- Cheese   grated parmesan, as much as
 Preparation
1) Lightly fry the chopped onion in the butter, add the peeled and diced artichokes, pour in the broth and leave to cook for about ½ hour.
2) Add the rice and cook for another 20 minutes.
3) Beat the egg yolks and 30g of the grated cheese together in a large soup dish.
4) Once the rice is cooked, pour it into the soup bowl and mix it up with the beaten eggs. Sprinkle the remaining grated cheese on top.
