| Ingredients (for 4 persons) |
| - Riso fino Ribe Divella |
| - Butter 60 g |
| - Meat Broth 2 lt |
| - Artichoke 3 |
| - Eggs 3 |
| - Onion half |
| - Salt as much as |
| - Cheese grated parmesan, as much as |
| Preparation |
| 1) Lightly fry the chopped onion in the butter, add the peeled and diced artichokes, pour in the broth and leave to cook for about ½ hour. |
| 2) Add the rice and cook for another 20 minutes. |
| 3) Beat the egg yolks and 30g of the grated cheese together in a large soup dish. |
| 4) Once the rice is cooked, pour it into the soup bowl and mix it up with the beaten eggs. Sprinkle the remaining grated cheese on top. |
