1° Step
Whisk the biscuits with the help of a mixer until you get a biscuit powder, then add the melted butter and mix it with a spoon.
Grease a hinged mold and carefully line it with baking paper, both on the bottom and at the edges. This operation is important to obtaining a cheesecake with regular and well-defined edges.
2° Step
It's better to grease the loaf pan before you line it, so the baking paper will adhere it perfectly. Put the biscuits into the bottom of the loaf pan, leveling with the back of a spoon. Leave to compact in the fridge at least half an hour.
3° Step
Soak the isinglass in cold water for at least 10 minutes. Work the cheese with the help of an electric whisk adding 70 g of sugar, taken from the total. Separately, whip the cream with the remaining 30 g of sugar, but remember to keep aside two tablespoons of cream that will serve to dissolve the isinglass.
4° Step
Then melt the isinglass in the two tablespoons of slightly heated cream in a saucepan, taking care to squeeze it well before adding it to the cream. Add the dissolved isinglass to perfection and warmed in the cheese mixture.
5° Step
Pour the mixture on the bottom of biscuits, level well with a spatula and leave to harden in the fridge for at least 6 hours. Remove the mold hinge and parchment paper, take out the cake and decorate it with strawberry jam and decorate with fresh strawberries.
