  • Carnaroli Rice, 400 g.
  • Speck Cubes, 150 g
  • Pumpkin cubes, 500 g
  • Milk, 150 ml
  • Vegetal Broth, as you need
  • Minced Onion, 1
  • Evo oil, as you need
  • Majoram, to garnish
  • Salt and pepper, as you need

This is the best time to taste pumpkin! We used it to prepare a special risotto, discover our recipe.
Step 1
Sauté chopped onions in a pan. Add the diced pumpkin, salt and pepper, and cover the pan with a lid. Let it cook over a medium heat for 15 minutes stirring occasionally. When the pumpkin is cooked, tip it in a graduated measuring jug, add the milk and blend until smooth.
Step 2
In a large saucepan, sauté chopped onions, add the Carnaroli rice and let it toast for one minute. Add three ladles of vegetable stock and cook over medium heat for 7 minutes.
Step 3
Add the diced speck, blended pumpkin, a ladle of vegetable stock and finish cooking. Sprinkle some marjoram leaves to serve. Enjoy!
